I make the same kind of potatoes, they are called smothered or grilled potatoes in Texas. In our house they are called Cowboy Potatoes (boys-what can I say). I always use my leftovers in breakfast burritos. I mix them with fried breakfast sausage and eggs, and top them with grated cheese, roll them in a buttered tortilla and wrap in foil to warm in toaster oven. I would like to try the fritatta. He has tried everything recommended. The iron supplement worked temporarily but it was soon back. He has taken Requip but had side effects from it and had to discontinue. Restless Leg Syndrome can be a real nightmare for those who suffer with it. He rarely get a good night's sleep. We live on the Texas coast and deal with hurricane season every yr. During Hurricane Rita, my FIL received MRE's; he was hit hard and lost power for a week. He passed some on to the boys and believe it or not, they were really good. I am a good cook and do not like any type of "instant" food. I was surprised at the quality of the food.
