My Day’s Great Deal – Avocados!

Yesterday I was at my local supermarket, King Soopers, getting fresh fruit when I saw that avocados were on sale for 77 cents each. The normal sale for avocados there is between $1 and $1.50 per avocado. So when I saw this excellent price (and that the avocados weren’t eeny weeny itty bitty) I put 3 of them in my cart. I understand why King Soopers put avocados at such a great sale price. The store needs to move all the ripe avocados out now or else the avocados will all need to be thrown out in a day or … Continue reading

Three Easy Microwavable Lunches

In previous posts I’ve written about Three Easy Lunches and Three More Easy Lunches which contain ideas for simple yet yummy lunches. Well, here are three more easy lunches that you can microwave. They all stay in the freezer until you need them. Lunch #1: Boca Burgers If you’re an American, you probably for sure love a good burger. Burgers are great, but how about substituting a soy Boca burger instead of a meat patty? One Boca burger takes only a minute in the microwave to be ready to go on a bun or even without one. And it has … Continue reading

Baking Up a Healthy Breakfast

I’m not a breakfast person. I’d prefer to sleep through breakfast and have an early lunch. That’s just me, but my daughter rises early and wants her breakfast right away. Whether I like it or not, either my husband or I have to get some kind of food ready for her to eat in the early morning. To be honest, her breakfasts have become rather unhealthy. Some of the easy breakfasts that we make her are (try not to gasp when you read beyond this) toaster strudels, pop tarts, cereal and frozen waffles. I know most of those sound really … Continue reading

Three More Easy Lunches

Yesterday I wrote about Three Easy Lunches to make for any day. Those three lunches were Tuna On Crackers + Tomato Slices, Macaroni & Cheese + Grapes, and Grilled Cheese Sandwich + Tomato Soup. Today I want to add three more easy lunches; those three lunches are Beans ‘n Rice, Baked Potato with Salsa, and Scrambled Egg Sandwich. Lunch #1: Beans ‘n Rice Do you like eating beans? I really do, and beans are a good alternative to meat in some dishes, and so much less expensive than meat, too. For Beans ‘n Rice, you could go for any of … Continue reading

Three Easy Lunches

Whether you’re a stay-at-home-mom and need to make an easy home-made lunch every day or you just like a good weekend lunch, here are 3 easy lunches to make any day of the week. Lunch #1: Tuna On Crackers + Tomato Slices Open a can of tuna fish, mix it with 1 heaping tablespoon of mayo and serve with crackers. You and your family can then spread the tuna/mayo mixture over each cracker or just scoop the tuna up with the crackers. Have a side of fresh tomato slices (season them up with salt and pepper) or chopped tomato for … Continue reading

Yummy Breakfast Dish: Boiled Egg Casserole

Recently I went to a mid-morning baby shower. Whenever it was time to have brunch, I couldn’t stop eating one of the egg casseroles. Now, I don’t much care for breakfast casseroles that use scrambled eggs in them, since I’m really picky about how my eggs are scrambled, but this breakfast casserole was different. It used boiled eggs instead of the regular scrambled, and with the combination of the other ingredients, this casserole had me encouraging some of the other ladies at the shower to be sure and try it! Maybe you need to bring a breakfast casserole to a … Continue reading

Three Kitchen Gadgets I Can’t Cook Without – Part 2

Yesterday I blogged about three kitchen gadgets that I could but didn’t want to cook without. Those gadgets are my salad spinner, my small plastic cutting board, and my small food processor, and those 3 are probably the most useful gadgets in my kitchen. However, there are plenty more useful kitchen gadgets that I use every day or at least a few times a week. Those other 3 kitchen gadgets are my wire colander, my glass mixing bowl set, and my rubber spatulas. Food Gadget #1: Wire Colander I don’t know how often you boil water in your kitchen, but … Continue reading

Three Kitchen Gadgets I Can’t Cook Without – Part 1

Listed here are my top three kitchen gadgets I can’t cook without (well actually I can cook without them but I just don’t want to!). What are they? My top three kitchen gadgets are my salad spinner, my small plastic cutting board, and my small food processor. Food Gadget #1: Salad Spinner The OXO Salad Spinner that I use in my kitchen is such a big helper to me. I’ve only had this gadget for 2 years now, but I never want to be without it again. This salad spinner comes with a plastic salad bowl and top (to keep … Continue reading

Learning to Cook

At home, my mom did all the cooking. She’s a great cook and although she probably would have loved to teach me to cook, I never showed any interest in cooking while I was growing up. Besides picking up on what she was doing in the kitchen some days, I wasn’t actually taught to cook by her. I first learned to cook from taking a cooking class in college right before getting married. At that point in my life, my cooking skills were about to be needed, so I had to learn. Since I was required to cook several meals … Continue reading

Keeping Favorite Recipes in One Book

Do you have some favorite recipes that you cook maybe several times a month? If you do, are your favorite recipes all together or must you look each of them up in separate cook books every time you want to make one of them? Well I certainly have favorite recipes that I cook over and over, and after having to look up these recipes in each of the cookbooks that they come from each time that I need to prepare a shopping list, I decided to find an alternative to storing my recipes. I got a journal-type notebook (about 4″ … Continue reading
