Microwve Peanut Brittle

     

Do you love Peanut Brittle? Well now you can make it in the microwave. Yes I said the microwave, can you believe it I never thought that you could make something like this in the microwave.  This is a really quick and easy way to make your favorite snack.  This is something that is good to put in your kids lunches too.

You will need: 1 cup sugar, 1/2 cup lightly corn syrip, 1/8 teaspoon salt, 1 cup raw peanuts, 1 teaspoon butter or margarine, 1 teaspoon vanilla extract And 1 teaspoon baking soda

Now the fun starts: Combine sugar, corn syrup and salt in 11/2 quart microwave-safe glass dish.  Stir in peanuts.  Microwave on high for 8 minutes, stirring after 4 minutes.  Stir in butter and vanilla.  Microwave on high for 1 minute. Stir in baking soda.  Pour immediately into lightly buttered baking sheet.  Let stand until cool.  Break into pieces.

This is a recipe that my husbands grandmother makes.  I did not even know that you could make peanut brittle at home, i know that sounds really crazy, but I always thought that it would be really hard to make so I always bought it. One day his grandmother came to vist us and brought some and I thought i was in heaven. Now i keep it around for a afternoon snack for my kids and me!
