Shimmering Shortbread Star

     

2 1/2 cups all-purpose flour                            Prep: 30 minutes

1/3 cups granulated sugar                              Bake: 15 minutes

1 1/3 cups butter                                           Oven: 325 degrees F

1/4 cup finely chopped pistachio nuts

1 tablespon finely shredded orange peel

1 recipe Orange Glaze

Silver and/or gold edible luster dust or edible glitter (optional)

  1. Preheat oven to 325 degrees.  In a large bowl stir together flour and sugar.  Using a pasty blender, cut in butter until mixture resembles fine crumbs and starts to cling.  Stir in pistachio nuts and orange peel.  Knead mixture until smooth and holds together.  (Dough will eventually come together while kneading, from the wrmth of your hands.) Divide dough in half.
  2. Line two ungreased cookie sheets with parchment paper; pat each half of dough to 1/2-inch thickness, about a 9x6-inch rectangle.  Using desired star pattern, cut out one large star shape and several smaller stars (2-to 1 1/2-inches) from each half of dough.  Remove dough trimming.  If desired, pat trimmings to 1/2-inch thickness and use 2- to 1 1/2-inch star cutters to cut out additional small stars.  Place on parchment-lines cookie sheets.
  3. Bake about 15 minutes or until edges are light brown.  Cool on the cookie sheet about 5 minutes.  Use a large spatula to carefully transfer cookies from parchment to wire racks to cool.
  4. Place the wire racks with the stars over waxed paper.  Spoon glaze onto stars, allowing glaze to flow over the sides to cover.  (spoon any glaze that drips on the waxed paper onto the stars.) Let stand until glaze sets.  If desired, brush with luster dust and sprinkle with glitter.  Makes 2 large (about 8 inches) and about 16 small stars (2- to 2 1/2-inches).
  5. Orange Glaze: In a small mixing bowl stir together 2 cups sifted powdered sugar and 2 tablespoons orange juice.  Stir in additional juice, 1 teaspoon at a time, until of glazing consistency (2 to 3 teaspoons total.) (Will need to double glaze for stars made from dough scrapes.) Makes 3 large stars (about 8 inches) and about 16 small stars (2- to 2 1/2-inches).

If you don't have a pastry blender a fork will do just as good.
