For those of you that love spicy food this is the recipe for you. You will need 1 cup long-grain rice, 1 cup frozen peas, thawed (4oz.), 1 cup frozen corn, thawed (4oz.), 1 skirt steak (about 11/4lb.), 1 teaspoon ground cumin, 1 teaspoon ground coriander, Salt and pepper, And 2 tablespoons olive oil Put rice in a medium saucepan and add 2 cups of salted water. Bring to a boil over medium-high heat. Reduce heat to low; cover and simmer for 15-20 minutes. Fluff with a fork, stir in peas and corn; cover to keep warm. Then mix cumin, coriander, salt and pepper in a small bowl. Cut steak into 3 large pieces. Rub spice mixture all over steaks, using hands to work seasoning into flesh as deeply as possible. Heat oil in a large skillet over medium-high heat. Add steak; cook until outside is browned adn center is pink, 4-5 minutes per side. Remover to a cutting board and let rest about 5 minutes. Slicing against graqin, cut steak into 1/4-inch-thick slices. Serve with rice. You can cook the rice ahead of time and then you don't have to worry about it. To heat cold, cooked rice, put it in a large bowl and add 1 tablespoon water. Microwave, uncovered for 1 minute; stir. Microwave for two more minutes. Cover the bowl with plastic wrap and let sit for 2 minutes before serving. If you have some leftovers and you don't want it again the next night you can use it to make fried rice. To make fried rice you add a scrambled egg, small pieces fo leftover steak and chopped scallions to day-old rice.
