I found this recipe in a magazine and it thought it was new and different. We havent tried it yet but we are gonna have it for thanksgiving. So we will see what kind of new taste it has. 2 pounds sweet potatoes, scrubbed, 2 tablespoons butter, plus additional 1/4 cups if abking outside meat, 11/2 cups chopped onions, 1/2 cup chopped celery, 1/2 teaspoon salt, 1/4 teaspoon pepper, 2 cups diced, peeled apples, such as Granny Smith or Golden Delicious, 1/2 cups apple cider, 1/4 teaspoon ground cinnamon, 1/4 teaspoon grated or ground nutme, 1/4 teapsoon ground cloves, 2 cups unseasoned bread crumbs and 1/4 cup chicken or vegtable stock or broth, if needed Cover potatoes with water in a large pot, bring to a boil, then reduce the heat and simmer, covered, until tender, about 20 to 25 minutes, until the potatoes can be pierced through with a sharp knife. Drain. When coool enough to handle, remove the skins and mash the potatoes ina large bowl. Next, heat 2 tablespoons butter in large skillet over medium-high heat until the foam subsides. Add the onions, celery, salt and pepper; cook, stirring, until the vegtables are softenedm, about 5 minute. Add the apples, apple cider adn spices; cook, stirring, until the apples are tender but sitll hold their shape, 3 to 4 minute. Stir mixture into the sweet potatoes, along with the bread crumbs. Adjust the seasongins and moisten, if needed, with the chicken or vegtable broth. Use as is as a stuffing, or turn into a buttered 9-by-9-inch baking dish and dot with the remaining 1/4 cup butter cut into small pieces. Bake at 350 degrees F for 20 minutes, until golden brown.
