Almost Eggless Egg Salad

Almost Eggless Egg Salad
Make with eggless mayonnaise for a completely eggless meal.

INGREDIENTS:
1 lb firm tofu, sliced and well drained
1 tbs minced onion
2 tbs minced celery
2 tbs mayonnaise
1 tbs sweet pickle relish
1 tsp distilled white vinegar
1 tsp prepared mustard
1 tsp white sugar
1/2 tsp ground turmeric
1/4 tsp dried dill weed
1 tbs dried parsley
1 pinch salt to taste
1 pinch ground black pepper to taste

DIRECTIONS:
1. In a small bowl, combine mayonnaise, sweet pickle relish, vinegar, mustard, sugar, turmeric, dill, and parsley. Mix well, and reserve.
2. Place drained tofu in large bowl, and crumble with a fork. Stir in onion and celery. Mix in reserved mixture. 3. Season to taste with salt and pepper. Chill for several hours to allow flavors to blend.
