Apple Pancakes!

Last time it was tomatoes, but not anymore! The apples have been coming in everywhere this week, and I find myself with an abundance of them. From Johnny Gold, to Gala to Granny Smith, our fruit floweth over. Because of the abundance, I have been trying a lot of apple recipes this week, and I would like to share them. And I am not the only one. Friends and neighbors are all taking advantage of all of the available apples. My neighbor just made two different apple pies.

Whether you are in the same situation now or will be soon, I hope you enjoy! The smell of apples cooking is heavenly in a home, isn’t it?

We started off with a simple breakfast recipe for Apple Pancakes. I do have to warn you that this recipe does not freeze well, so make sure to gobble them up fresh.

Apple Pancakes

This recipe will make about 9 large pancakes

Ingredients:

2 sticks of butter, melted and cooled slightly

2 eggs, beaten

2 cups milk

2 good sized tart apples, peeled and quartered

2-1/2 cups all-purpose flour

2-1/2 teaspoons baking powder

1 teaspoon ground cinnamon

2 generous tablespoons white sugar

Directions:

Using a large bowl, combine flour, baking powder, cinnamon and sugar. Use a whisk to fluff and combine it.

Using a medium size bowl, combine the melted butter, beaten eggs and milk.

Chop apples pieces in a food processor and then add them to the butter mixture.

Stir the butter mixture into the flour mixture just until it is combined.

Butter an electric griddle or frying pan, then place it over medium high heat (about 350 degrees).

Using a ladle or measuring cup, scoop the batter on to the griddle or pan. Cook on first side until bubbles appear and break. Flip the pancakes and continue to cook until the opposite side is golden brown.
