Apple Pecan Pancakes
The classic combination of apples and pecans served warm in a pancake!
INGREDIENTS:
2 cups flour
3 tbs sugar
4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 large eggs
1 1/2 cup milk
1 tsp vanilla
4 medium apples, peeled and grated
1/2 cup chopped pecans
DIRECTIONS:
1. Add dry ingredients to a large bowl and combine.
2. In a separate bowl, combine eggs, milk and vanilla, then add to dry ingredients and mix.
3. Stir in apples and pecans. Pour batter into heated, well-greased skillet. Turn when bubbles appear.

Cook: 20 minutes
