Apple Streusel Cheesecake
A bit time consuming, but worth the effort!
INGREDIENTS:
3 medium apples
1/4 cup granulated sugar
2 tbsp butter
2 tbsp whipping cream
8 oz cream cheese
1/2 cup packed brown sugar
2 large eggs
1 cup sour cream
1 medium lemon, juice and rind
1/2 cup all purpose flour
1/4 cup packed brown sugar
1/4 tsp cinnamon
1/4 cup softened butter
1 cup flour
1/3 cup granulated sugar
1/2 cup softened butter
DIRECTIONS:
1. Heat oven to 350. Cream 1/2 cup butter and 1/3 cup sugar well. Blend in 1 cup flour. Press into greased spring form pan.
2. Bake 12-15 minutes.
3. Meanwhile, cut apple into 1/3″ slices. Over medium heat in a skillet, cook apples 3-5 minutes, until tender.
4. Add cream and cook for 5 minutes more. Set aside.
5. Beat cream cheese and brown sugar until smooth. Beat in eggs one at a time until blended.
6. Beat in sour cream, lemon juice and rind. Arrange apples over crust. Cover with cheese mix.
7. Mix 1/2 cup flour, 1/4 brown sugar, cinnamon and 1/4 butter until crumbly. Sprinkle over filling.
8. Bake at 350 for 45 min or until center is set. Cool. Then chill at least 4 hrs or overnight.
