Bahamian Peas & Rice

Bahamian Peas & Rice
Serve with fresh fish for a filling meal.

INGREDIENTS:
1/4 lb salt pork, diced
1 small onion, sliced
1 rib celery, chopped
1/4 cup tomato paste
3 cup water
1 pinch salt and freshly ground pepper
1 tbs vegetable oil
1/4 medium green pepper, diced
1 tsp dried thyme leaves
3/4 cup cooked black eyed peas
2 cup uncooked white rice

DIRECTIONS:
1. Fry the salt pork in a large skillet until the fat has been released, then add the vegetable oil.
2. Add the onion and saute until translucent. Then add the green pepper, celery, thyme, and tomato paste.
3. Reduce the heat, cover, and simmer for 5 minutes. Add the peas and cook for another 5 minutes.
4. Transfer the pea mixture to a saucepan and add the water and salt and pepper to taste.
5. Bring to a boil, add the rice, and stir. Reduce the heat when the water returns to a boil.
6. Cook, uncovered, for about 25 minutes, or until the liquid is absorbed.
