Baked Onions Stuffed with Oyster Dressing
A great side side for a small dinner party.
INGREDIENTS:
6 medium yellow onions, washed and peeled
1/2 tsp salt
1 can chopped oysters, undrained
1 cup Ritz cracker crumbs
1/4 cup finely chopped green bell pepper
3 tbs butter, melted
3/4 tsp poultry seasoning
1 cup water
DIRECTIONS:
1. Preheat oven to 350 degrees. Place the onions and salt in a large pot of water, boiling for 20 minutes or until firm but slightly tender when pierced with a fork.
2. Drain the onions, cool, and carefully hollow them out with a paring knife.
3. Set the hollowed-out onion shells aside. Chop the core of the onion finely and set aside.
4. Combine the oyster, 2/3 cup of the cracker crumbs, the bell pepper, 2 tbs of the melted butter, the poultry seasoning, and the chopped onion in a small bowl.
5. Stuff the onion shells with the dressing, mounding the remaining dressing on top. Mix the remaining cracker crumbs with the tbs of butter in a small bowl.
6. Place the crumbs on top of the stuffed onions. Place the water in the bottom of a shallow baking pan.
7. Place the onions in the water and bake for 45 minutes or until the onions are tender and the tops are a golden brown.
