Baked Squash Casserole

Baked Squash Casserole
Perfect when you have lots of summer squash left and have run out of things to do with it!

INGREDIENTS:
8 medium yellow squash, sliced
1/4 medium onion, chopped
1/4 lb butter
6 large beaten eggs
1 cup milk
2 cup American cheese, grated
1 1/2 cup saltine crackers, crushed

DIRECTIONS:
1. Boil squash with onion and butter just until it loses its firmness a bit. Add salt and pepper to taste.
2. Cook down to as little liquid as possible. Add 1 cup milk and 1 1/2 cup cheese, let cool.
3. Mix beaten eggs and cheese mixture with squash.
4. Place in baking dish and top with remaining 1/2 cup cheese and cracker crumbs. Dot with butter.
5.Bake at 375 until bubbly.

Prep: 5 minutes
Cook: 25 minutes
Serves: 6
