Baked Stuffed Shrimp

Baked Stuffed Shrimp
Don’t be put off by the long list of ingredients. This dish is easy to make and is really impressive.

INGREDIENTS:
24 jumbo shrimp
1 medium onion
1 medium green pepper
6 tbs butter
1 cup fresh crab meat
1 tsp dry mustard
1 dash Paprika
1 tsp Worcestershire sauce
1/2 tsp salt
2 tbs mayonnaise
2 tbs flour
1 cup milk
1 tbs sherry wine, or more
2 tabs Grated Parmesan cheese

DIRECTIONS:
1. Mince onion and chop pepper. Saute in 4 tbs of butter until soft but not brown.
2. Meanwhile, clean and remove heads and shells from shrimp, leaving tails.
3. Split shrimp and open flat.
4. Remove the onion and pepper from heat to a mixing bowl.
5. Add the crab meat, dry mustard, Worcestershire sauce, salt and mayonnaise. Set aside.
6. Make a white sauce using remaining 2 tbs of butter, flour and milk in a small saucepan.
7. Add white sauce to crab meat mixture along with the sherry. Mix well.
8. Stuff the butterflied shrimp with the crab meat and dot with extra butter.
9. Sprinkle lightly with Parmesan cheese and paprika. Arrange in shallow baking pan and bake at 350 degrees F for 25 to 30 minutes.
