Baking Up a Healthy Breakfast

I’m not a breakfast person. I’d prefer to sleep through breakfast and have an early lunch. That’s just me, but my daughter rises early and wants her breakfast right away. Whether I like it or not, either my husband or I have to get some kind of food ready for her to eat in the early morning.

To be honest, her breakfasts have become rather unhealthy. Some of the easy breakfasts that we make her are (try not to gasp when you read beyond this) toaster strudels, pop tarts, cereal and frozen waffles. I know most of those sound really junky, and I agree, but like I said before, I’m not a breakfast person. I know it’s probably wrong of me to give her those breakfast items, but I haven’t quite figured out yet what’s both easy and healthy, and what she’ll eat. She won’t eat scrambled eggs for breakfast every day!

Not only am I not a breakfast person, but I’m not a baking person either. Sure I like to cook, but just like Rachael Ray, I don’t care too much for baking. If I would bake, though, there could be some healthier options for my daughter’s early morning breakfasts. For instance, I could bake Bran Muffins for her. Bran Muffins are full of fiber, which is hard to get enough daily intake of in the first place. I could slice her muffin up and spread butter on it to help it go down easier.

Another healthy baking option is a healthier recipe of Banana Bread. Not every recipe of Banana Bread is healthy. If a recipe calls for vegetable lard or lots of sugar, it’s probably time to find a healthier Banana Bread recipe. They do exist, since there’s one I plan to try out soon. And, instead of using sugar to make it sweet, I could consider using fructose or even Splenda in my banana bread. Even my daughter would probably love to gobble up a sweet piece of healthy banana bread in the morning.

Those are two healthy breakfast ideas, although they require before-hand baking. If you have other healthy breakfast ideas, please share them here. And in the meantime, maybe, just maybe I’ll start baking.
