Beef and Carrot Barley Soup

Beef and Carrot Barley Soup
Hearty and filling, plus good for you too!

INGREDIENTS:
4 cups water
1 cup dry barley
3 cubes beef bouillon cubes
1 1/2 tsp sugar
1/2 tsp black pepper
1 tsp thyme
1 tsp garlic powder
1/2 lb lean ground beef
3 medium carrots, sliced into 1-inch strips

DIRECTIONS:
1. Bring water to boil in a medium saucepan.
2. Add barley, bouillon cubes, sugar, pepper, thyme and garlic powder.
3. Cover and reduce heat; simmer 30 minutes.
4. While soup is simmering, saute beef until brown; drain and rinse with cold water.
5. Add beef and carrots to barley after barley has been simmering 30 minutes; cook another 15 minutes.

Cook: 50 minutes
Serves: 4
