Black Bean and Vegetable Chili
A unique chili recipe that includes broccoli (clever way to disguise it).
INGREDIENTS:
1 tsp olive oil
1 medium onion, diced
2 clove garlic, crushed
1 small red pepper, diced
1 can black beans, rinsed and drained
1 medium tomato, cut into pieces
1 cup frozen corn
1 1/2 tbs chili powder
1 tsp ground cumin
1 tbs tomato paste
1 cup fat-free, low-fat chicken broth
1 cup broccoli florets
4 oz low-fat honey roasted ham, diced
1 pinch salt and pepper
DIRECTIONS:
1. Preheat oven to 350 degrees F. Heat oil in a large nonstick skillet on medium high.
2. Add onion and saute 3 minutes. Add garlic and red pepper. Saute 3 more minutes.
3. Add black beans, tomatoes, corn, chili powder and cumin.
4. Mix tomato paste into chicken broth and mix into chili. Simmer, covered, 10 minutes.
5. Add broccoli and ham and simmer 5 more minutes. Add salt and pepper to taste. Adjust seasonings as desired.

Cook: 30 minutes
