Black Bean Gazpacho
A new twist on gazpacho!
INGREDIENTS:
3 cup tomatoes, chopped, peeled and seeded
12 oz hot style vegetable juice cocktail
1 cup cubed fully cooked ham
15 oz black beans, drained
1/2 cup chopped seeded cucumber
1/2 cup chopped yellow pepper
1/4 cup thinly sliced green onion
2 tbs italian salad dressing
1 dash hot pepper sauce
DIRECTIONS:
1. Combine tomatoes, juice, ham, beans, cucumber, chopped pepper, green onion, and dressing.
2. Cover and chill for 2 to 24 hours. If desired, serve with bottled hot pepper sauce.
