Blue Ribbon Banana Cake
Pairs nicely with cream cheese frosting.
INGREDIENTS:
3/4 cup shortening
1 1/2 cup sugar
2 large eggs
1 cup mashed bananas
1/2 cup buttermilk
1 tsp soda
2 cups cake flour
1 tsp baking powder
1 tsp vanilla
1/2 cup chopped pecans
1 cup coconut
DIRECTIONS:
1. Cream sugar, shortening and eggs. Add bananas and buttermilk.
2. Mix flour, salt, baking powder, soda slowly and beat well. Add nuts and vanilla.
3. Pour into two 9 inch pans. Sprinkle coconut on top of batter. Bake at 350 for 25 to 30 minutes.
