Blueberry Corn Bread
Dessert? Side dish? Doesn’t matter, it’s just plain good!
INGREDIENTS:
1 cup flour, sifted
3/4 cup cornmeal
3 tbs sugar
1 tsp baking powder
3/4 tsp salt
1 cup blueberries, fresh or frozen
1 large egg
2/3 cup milk, lowfat
1/3 cup salad oil
DIRECTIONS:
1. Grease or spray square baking pan. Preheat oven to 425F.
2. In bowl mix flour, cornmeal, sugar, baking powder and salt. Stir in blueberries.
3. In small bowl beat egg; add milk and oil, mix. Pour all at once into flour mixture.
4. Stir just until dry ingredients are evenly moistened. Pour batter into baking pan.
5. Bake 25 minutes or until golden.
Prep: 10 minutes
Cook: 25 minutes
