Celebrity Recipes: Alfred Hitchcock’s Quiche Lorraine

I am always interested in the favorite recipes of celebrities. A while back, I posted Joan Crawford’s recipe for meatloaf. Like Crawford, I never thought of Alfred Hitchcock as much of a cook, but while searching around the Internet, I found this recipe. It claims to be Hitchcock’s recipe for Quiche Lorraine. I have no way of validating whether this is actually his recipe or not, but it sounded good, so I thought I would post it here!

For this recipe, you will need pastry flour, butter, eggs, 2 to 3 slices of diced ham, two onions, cayenne pepper, nutmeg, and milk.

To make the tart pastry, work together 2 cups of pastry flour, 1/2 cup of butter, 1 egg yolk, a pinch of salt, and 1/4 cup of cold water. Once this is mixed well, chill it in the refrigerator for one hour. Roll out half of the dough. It should be enough to cover a pie pan. After you place the dough in the pie pan, make a few pricks with the bottom with a knife and crimp the edges with a fork. The remaining pastry can be frozen to be used for your next quiche recipe.

Preheat the oven to 375 degrees. For the filling, spread the diced ham evenly on the crust. Slice the two onions into slices about 1/4 inch thick. Place them in a skillet with butter and saute them but do not let them brown. Once those are soft, spread them over the ham. In a medium saucepan, beat four eggs. Add a pinch of salt, nutmeg, and cayenne pepper and stir. Stir in 2 cups of hot milk gradually with a whisk. Continue to whisk this until this thickens. Pour the egg mixture over the onions and ham. Bake the quiche in the oven for 30 minutes or until the top is golden brown.
