Coconut Oil Recipes

After discovering the health benefits of coconut oil it is time to get a few recipes using coconut oil so you can begin using it practically in your kitchen.

Coconut Cream Mocha

1/2 cup cocoa powder

1/3 cup sugar or honey

3 1/2 cups whole milk

1/2 cup water

1/4 cup coconut cream concentrate

1 1/2 – 2 cups strong black coffee

2 teaspoons vanilla extract

whipped cream, for garnish − optional

ice cream, of your choice for garnish − optional

In a large saucepan with a wire whisk, stir together cocoa and sweetener. Over medium heat, add 1 cup of milk, the water and coconut cream concentrate. Whisk and bring to a simmer.
Add coffee and remaining milk and whisk until mocha is nice and hot. Add vanilla. Remove from heat and serve with a spoonful of the optional garnishes if desired. Enjoy!!

Note: For a real energy booster, add 3 tablespoons of coconut oil.

For that recipe feel free to substitute whipped cream for fat free whipped cream and ice cream for low fat ice cream, fat free ice cream, or frozen yogurt. You can also substitute skim milk for whole milk or please substitute the sugar with honey.

Garden Fresh Coconut Oil Stir Fry

Servings: 4

Preparation Time: 10 minutes

coconut oil, as needed

1 pound cooked chopped meat (chicken, steak, etc)

2 eggs

2 carrots, sliced bias

2 celery stalks, sliced bias

1 bunch kale sliced in strips

2 bunches collard sliced in strips

3 cups cooked jasmine rice

organic fermented soy sauce

Heat the oil in a large frying pan over medium heat.
Stir fry the meat until browned (or just until heated through). Add eggs, stir to break up while cooking. Add carrots, fry until very slightly tender. Stir in celery and cook slightly.
Add chopped kale and collards, fry a few minutes before adding rice, frying and stirring for approximately 5 – 8 minutes. Serve with organic fermented soy sauce.
