Creamy Spinach over Linguine
Great vegetarian meal!
INGREDIENTS:
2 1/2 cups milk
1 box chopped spinach
1 bunch fresh Italian parsley
1 medium onion, chopped
1/2 cup grated Parmesan cheese
2 cloves garlic
1 pinch salt and black pepper
1/8 cup olive oil
1 lb linguine
DIRECTIONS:
1. Boil water for linguine. Meantime, in a large skillet heat olive oil. Add onion and garlic. Cook until tender.
2. Put remainder of ingredients in skillet and cook on medium heat for about 10 minutes.
3. Place in a blender, blend until smooth. Pour the spinach mixture into the skillet then add cooked linguine.
4. Toss together, and then serve.
Prep: 5 minutes
Cook: 20 minutes
