Curried Tuna Wrap
Spice up your tuna sandwich!
INGREDIENTS:
1/2 cup dry whole wheat couscous
3/4 cup boiling water
6 oz chunk light tuna
1/4 cup plain yogurt
1 tsp curry paste
1 medium green onion chopped
1/2 cup shredded carrot
1 small apple, cored and diced
1 pinch pepper to taste
4 count whole wheat wraps
4 large lettuce leaves
DIRECTIONS:
1. Put couscous in a heatproof bowl and pour in boiling water.
2. Cover and let stand 5 minutes or until water is absorbed.
3. Fluff couscous with a fork and cool to room temperature.
4. Combine tuna, yogurt, curry paste, onion, carrot, and apple. Gently blend tuna mixture and couscous.
5. Season to taste with pepper. Divide couscous mix, and lettuce onto the four wraps.
6. Fold bottom quarter of the wrap over the filling. Roll up the sides to enclose.

Cook: 5 minutes
