Diabetic Lemon Cheesecake
A diabetic dessert everyone will enjoy.
INGREDIENTS:
1 box sugar-free lemon gelatin
2 tbs lemon juice
16 oz low-fat cream cheese
1 cup boiling water
1 count graham cracker pie crust
DIRECTIONS:
1. Stir the boiling water into the box of jello, mixing for about 2 minute.
2. Add the cream cheese and lemon juice.
3. Mix until all lumps have disappeared.
4. Pour into pie crust and chill until set.
