I love finding new recipes that use eggplant. Here are two recipes I hope you will enjoy!
Chinese Eggplant Fries
This is a nice substitute for French fries! They go great with burgers, steaks, chicken, or seafood. For this recipe, you will need all purpose flour, cornmeal, cayenne pepper, eggs, vegetable oil, and two eggplants.
Peel the eggplants and slice them into French fry size pieces. In a bowl, mix 2 cups of all purpose flour, 1 cup of cornmeal, 1 dash of cayenne pepper, and add salt and pepper to taste. In a separate bowl, beat two eggs together.
Heat 3 tablespoons of vegetable oil in a large skillet over medium heat. Dip one of the eggplant fries into the beaten eggs, and then roll it in the flour mixture. Repeat the process then carefully place it in the skillet. Keep repeating these steps until all the eggplant fries are cooking in the skillet. Let them cook until golden brown, then drain on a paper towel and serve hot.
Easy Eggplant Dish
For this recipe, you will need one eggplant, one yellow squash, one small onion, dry bread crumbs, butter, one can of sliced green chilies, buttery round crackers (Ritz Crackers work great), and shredded mozzarella cheese.
Peel and dice your eggplant and squash. Chop the onion into small pieces. Preheat your oven to 350 degrees. Bring a large pot of water to boil then add the eggplant and squash. Let this cook about 10 minutes (until tender). Drain them and allow them to cool.
Combine the eggplant, squash, one cup of chopped onions, 1 cup of dry bread crumbs, 1 tablespoon of butter, and 1/8 cup of sliced green chilies in a 2-quart casserole dish. Sprinkle 1/2 cup of mozzarella cheese on top. Crush enough of the buttery round crackers to make 1/3 of a cup then spread them on top. Bake in the oven for 30 minutes.
