Easy Tater Tot Casserole and Baked Chicken—Two Meals For One Busy Week

I remember when my friend Lisa first told me about this recipe. It’s deliciously simple, but it’s one of the recipes she cherishes from her childhood. It just goes to show that recipes don’t have to be complicated to be remembered. If you haven’t cooked with your kids for a while, give it a try. Or, if your children are grown, try asking them what their favorite recipes of yours are. You might be surprised to hear the answer.

For this recipe you’ll need:

4 chicken breasts or any chicken parts you’d like

Milk or margarine for dipping

Bread Crumbs

Parmesan cheese

Salt

Pepper

Garlic powder

Paprika

To make this recipe:

Dip the chicken in milk or margarine to coat. Combine the remaining ingredients and coat each piece of chicken well. Line a baking pan with foil for easy clean up and bake the chicken at 350 degrees for approximately one hour.

Easy Tater Tot Casserole

If you love hamburgers and if you love potatoes then this is a deliciously easy recipe you can prepare for your family during the week. The addition of cheddar cheese and sour cream makes this casserole comfort food goodness and a mouth watering meal your family will love.

Great for adults and children alike, this meal will remind you that convenience foods are your friend. It never hurts to take a little help from your local grocery store.

For this recipe you’ll need:

1 bag of frozen tater tots

1 can cheddar cheese soup

½ cup sour cream

1 pound ground beef

½ onion-chopped

To make this recipe:

Brown the ground beef and onion in a skillet. Warm the cheddar cheese soup in the microwave and combine it with the sour cream.

In an 11×9 dish, layer the cooked ground beef (save a little for the top), potatoes, and then the soup and sour cream mixture. Top with additional cooked ground beef.

Bake in a preheated 350-degree oven for 30-40 minutes.
