Easy Tips to Make Meal Time SIMPLE

The one thing that stops many families from cooking is the idea that it is difficult, time consuming, and expensive. In truth, it can be all of those things, but only if you let it. Here are some tips I use to get dinner on the table fast for my family, without going through a drive through.

Rotisserie chicken – This is my number one “go-to.” It’s perfect on a busy weeknight or when you want a nice weekend meal without all the weekend fuss. Buy it from your grocery store. It’s cooked, it’s moist, it’s delicious, and it’s easy! Cut it up and serve it with a loaf of French bread, some steamed rice, and a salad. Or shred it and make a quick chicken soup with chicken broth, canned veggies, and a handful of egg noodles. For another easy idea, cook up two packets of Mahatma brand saffron rice then add shredded chicken to it. It’s a one-pot wonder! You can also buy this a few days ahead. When you’re ready to eat it, place the cooked chicken in a casserole dish, surround with chopped potatoes and veggies (carrots, green beans, etc), cover with lid and cook at 375-400 degrees for one hour. Serve with crusty bread and voila! Dinner is ready in a snap.

Steamed Veggies – Forget the fancy shmancy veggies. Just cut up a head of cauliflower, some broccoli and baby carrots, place them in a casserole dish with ¼ cup water, cover the dish with the lid and microwave for 7-8 minutes. Easy as pie!

Pasta – Need I say more? Pasta takes less than 10 minutes to cook. For a super easy meal, boil a pound of angel hair pasta then top with the zest and juice of one lemon, olive oil to moisten, fresh cherry tomatoes (cut in half), chopped basil, and feta cheese. This one is good year round. If you’re in the mood for something heartier, just buy your favorite jarred spaghetti sauce, add a can of diced tomatoes and a packet of spaghetti seasoning. Bring to a boil then simmer for 15 minutes. It’s all day flavor in no time at all.

With a few simple choices, you can feed your family good, hearty, nutritious food in less time than it takes to drive around the corner to the nearest fast food joint.
