Five Points Lasagna

Five Points Lasagna
This recipe is great to serve for a large family meal with the relatives and still maintain your diet. As the name references, this dish is 5 Weight Watchers points per serving.

INGREDIENTS:
12 whole lasagna noodles, uncooked
2 cups shredded reduced fat mozzarella cheese
1/2 cup grated nonfat or reduced fat Parmesan cheese
15 oz nonfat ricotta cheese
1 cup nonfat cottage cheese
2 tbs finely chopped parsely
8 oz 95% lean ground beef
32 oz cans of tomato sauce
16 oz can crushed tomatoes
2 tbs tomato paste
1 medium onion, chopped
1 1/2 tsp crushed garlic
2 1/2 tsp dried Italian seasoning

DIRECTIONS:
1. To make the sauce for the lasagna, brown ground beef and drain.
2. Add last six ingredients to browned ground beef and stir, bring to a boil, reduce heat, cover and simmer for 25 minutes.
3. Mean while to make the filling, combine the ricotta, cottage cheese, 1/4 cup of the parmesan cheese and the parsley in a large bowl and stir to mix well.
4. When the sauce is finished, assemble the lasagna as follows. Coat a 9×13 pain with cooking spray.
5. Spoon 1 cup of the sauce over bottom of pan. Lay 4 uncooked noodles over the bottom of the pain (3 lengthwise and one crosswise).
6. Allow a little space between noodles for expansion. Top noodles with half of the filling mixture, 3/4 cup of mozzarella, and 1 1/2 cups of sauce.
7. Repeat the noodles, filling, mozzarella and sauce layers.
8. Finally top with remaining noodles, sauce, Parmesan and mozzarella.
9. Cover the pan with aluminum foil and bake at 350ยบ F for 45 minutes, remove foil and bake for 15 more minutes or until the edges are bubbly and the top is brown. Remove from oven and let rest for 5 minutes before cutting and serving.
