Fusilli With Sausage & Peppers
Great italian dish that doesn’t have any heavy sauces.
INGREDIENTS:
1/2 lb italian sausage
1/2 lb fusilli pasta
1/4 cup olive oil
1/4 medium red pepper, julienned
1/4 medium yellow pepper, julienned
1/4 cup sun-dried tomatoes cut into small pieces
1/2 cup tomato sauce
1/2 tsp dried basil
2 tsp chopped fresh parsley
DIRECTIONS:
1. Place sausage in saucepan with sufficient water to cover. Bring to a gentle boil & cook for 5 minutes.
2. Drain the sausage & when cool cut into small pieces & set aside. In large pot cook pasta 8-10 minutes.
3. Drain, set aside. In a large fry pan over medium heat, add olive oil & sauté sausage for about one minute, until slightly browned.
4. Add peppers & sun-dried tomatoes & sauté for another minute.
5. Add tomato sauce & basil & bring to boil. Add pasta & cook another minute, stirring constantly to combine & heat through.

Cook: 25 minutes
