Ham and Cheese Omelette

Ham and Cheese Omelette
A classic that never goes out of style.

INGREDIENTS:
6 large eggs, beaten
1/2 cup milk
1/4 cup finely-chopped ham
1 tbs finely chopped green onion
1/4 tsp salt
1 dash freshly-ground black pepper
2 tbs butter or margarine
1 cup shredded sharp cheddar cheese, divided

DIRECTIONS:
1. In a medium bowl, mix eggs, milk, ham, onion and seasonings.
2. Place a 10-inch skillet over medium-high heat and melt butter. Pour egg mixture into skillets.
3. As the omelette begins to set, lift up edges with spatula to uncooked portion of eggs can flow under the cooked portion.
4. When eggs are set but top is still moist, sprinkle 3/4 cup of cheese over top.
5. Fold one edge of the omelette over the cheese, the sprinkle with remaining cheese.
6. Slide onto plate and cut into portions.
