Herb Crusted Salmon with Steamed Artichokes

I say if you’re going to eat salmon, do it right. Pair it with fresh, delicious ingredients, and dive in. This recipe is satisfying and simple, but elegant enough to serve for your next dinner party.

For this recipe you’ll need:

2 pounds salmon steak

salt and pepper to taste

1 shallot, minced

4 cloves of garlic, minced

2 Tablespoons dill, chopped

2 Tablespoons thyme, chopped

2 Tablespoons cilantro, chopped

1 yellow chile, chopped finely

Zest of one lemon

Juice of one lemon

3 Tablespoons olive oil

To make this recipe:

Preheat oven to 350 degrees.

Spray a cooking dish with cooking spray. Place salmon in dish with the skin side down. Sprinkle with salt and pepper. Chop the shallot, garlic, dill, thyme, cilantro, and yellow chile. Combine these ingredients with the zest and juice of 1 lemon and the olive oil. Top the salmon with the mixture evenly.

Bake at 350 degrees, uncovered, for 25-30 minutes, or until salmon is cooked through to desired doneness. Serve hot with rice or mashed potatoes.

Artichokes:

For this recipe you’ll need:

2 large artichokes

½ white onion, diced

2 TB olive oil

2 TB butter

4 cloves garlic, minced

1 TB chives, chopped

1 TB lemon thyme (may substitute regular thyme)

Desired amount of crushed red pepper flakes

To make this recipe:

Prepare the artichokes: Cut off the thorny tops of the leaves with scissors. Cut off ½ the stem. Trim the stem with a paring knife to expose the white area. Cut the artichoke in half and remove the purple choke with a spoon. (you may opt to do this after the artichokes are cooked)

In a large pot, melt the butter and oil on medium high heat. Add onions, garlic, pepper and herbs. Reduce the heat and add the artichokes. Saute for a few minutes then add water to cover. Cover, reduce heat and steam for 30 minutes
