Large Family Recipes: Pancakes

pancakes When you have a larger family, the standard recipes sometimes don’t apply. Most recipes are crafted to feed four people at a time, but what if you have more, or your family includes hungry teenagers? You need large family recipes that will work.

Pancakes can be a little tricky when you upscale them. The amount of baking powder, for example will be off if you simply times everything by three or four for example. after a few experiments, I’ve come up with a pancake recipes that is delicious, inexpensive and will feed my family. Plus it gives me a few extra pancakes left over to freeze for hectic mornings.

You might wonder why not simply buy a mix? Well, we tried that, several mixes in fact. Most of the time it was neither cost effective or tasted as good as pancakes from scratch. Plus, we still had the same problems about making more than one serving. The pancakes usually came out too thin or didn’t rise the right way.

These pancakes hold up to many add ins, from blueberries to chocolate chips!

Ingredients:

4 large eggs

3 cups of all-purpose flour (I buy my in bulk at the natural food store)

3 cups of whole milk

4 tablespoons of sugar (I use evaporated cane sugar)

8 tablespoons of canola oil

9 teaspoons of baking powder

1 teaspoon of salt

Directions:

1. Mix all of the dry ingredients together in a large bowl with a whisk to blend them well.

2. Beat the eggs in a medium bowl and then add the milk and and oil and mix well.

3. Add the wet ingredients to the dry ingredients and stir until just combined. Don’t over mix. Some lumps and bits of flour are fine.

4. Heat the griddle or skillet to temperature. The batter can rest while you are preheating. Grease the griddle or skillet if necessary.

5. Pour about 1/4 cup of batter for each pancake. Cook the pancake until the bubbles start popping through. Flip the pancake and cook it on the opposite side. Enjoy!
