Make Mine Chocolate

Mick doesn’t often venture into the kitchen to cook. More often than not that is my domain. When he does, he usually makes something sweet and chocolaty. The other day he decided to make a sweet treat to take with us to the football. This is the one he made.

Occasionally you get a slice that is rich and almost impossible to resist. I defy anyone to not want to come back to for a second piece of this one or even a third. So although I am giving you a quantity here for one slice, I suggest you double or triple it as it will not last long. If you can manage to save it from the hungry hordes, it does freeze well. The trick is getting it into the freezer before hungry vultures demolish the lot.

This recipe is so easy it is ideal to make with children, so long as you are careful about melting butter and those bits where the stove is needed.

Delicious Hedgehog Slice

Ingredients

Slice Base

6 ounces margarine or butter

2/3 cups castor sugar

4 tablespoons gluten free cocoa powder

2 tablespoons shredded coconut

1 beaten egg

4 ounces crushed gluten free coconut biscuits

2 ounces slivered almonds

6 ounces gluten free puffed rice

Chocolate Topping

8 ounces gluten free chocolate buds

2 ounces margarine

Method
Slice Base

Prepare slice tray lined with baking paper.

Melt margarine castor sugar and cocoa in a saucepan over a medium heat, stirring all the time to dissolve sugar. Cook for three minutes.

Remove from heat. Add shredded coconut, beaten egg, crushed biscuits and puffed rice.

Press mixture into prepared sluice tray. Chill for an hour before adding topping.

Chocolate Topping

Melt chocolate buds and margarine in a bowl over simmering water. Spread topping evenly over slice.

Allow to set in fridge for at least 20 minutes.

Slice into pieces with a sharp knife.
