Making Holiday Fudge and Other Chocolate Christmas Treats

You can’t go an entire holiday season without indulging in a little (or a lot) of fudge, right? (I’ll let my hips answer that one.)

Actually, for years I lived a fudge-free life (save for the occasional slip up at a holiday party). But, then I found the simplest fudge recipe known to man. It makes creating fabulous fudge so easy it’s dangerous for people like me who have little will power when it comes to sweet treats. Add in my Super Simple Brownie recipe and the holidays are just a 10-pound accident waiting to happen.

HOLIDAY FUDGE

Ingredients:

12 oz. evaporated milk

4 1/2 cups sugar

3 bars German Sweet Chocolate

12 ounces semi sweet chocolate chips

1 teaspoon vanilla extract

7 oz. jar Marshmallow Fluff

1 1/2 cups your favorite chopped nuts

Directions:

Rinse a large pot in cold water then put evaporated milk and sugar in pot and place on the stove. This mixture will double in size, so be sure you use a large pot so it doesn’t boil over. Bring mixture to a boil, stirring constantly, and boil for about five minutes.

Meanwhile, in a large bowl melt chocolate bars and chocolate chips in microwave oven, stirring every minute or so. Remove from oven and add vanilla extract and marshmallow cream.

Pour milk/sugar mixture into chocolate mixture and stir until smooth.

Pour into a large, greased pan with sides and top with nuts.

Allow to cool, then cut into squares.

SUPER SIMPLE BROWNIES

Ingredients:

8 (1 ounce) squares of unsweetened chocolate

1 cup butter

5 eggs

3 cups sugar

1 tablespoon vanilla

1 1/2 cups flour

1 teaspoon salt

1 cup chopped walnuts

Directions:

Preheat oven to 375 degrees. Grease a 9 by 13-inch pan.

Melt chocolate and butter in a saucepan over low heat, set aside.

In a mixer, beat eggs, sugar and vanilla on high speed for about 5 minutes. Blend in chocolate mixture, flour and salt until just mixed. Stir in the nuts. Pour into pan.

Bake for 30 to 40 minutes.

Remove from oven and allow to cool for at least 20 minutes before cutting.
