Pantry Challenge: Campbell’s to The Rescue!

oven knob What do you do when you have a ton of canned soup? Visit the Campbell’s recipe site of course!

Another day of my pantry challenge. We are still doing pretty well with using our stock. One of the things I forgot to mention is that we very rarely eat red meat in our house, so you will see a lot of chicken, bean, pasta and vegetables dishes. Although with not buying any produce, the vegetables are scarce. I may break down this week and get some fresh fruits and veggies, because of the health factor.

For breakfast, we had some homemade “Egg McMuffins,” using up the remainder of our thawed english muffins, with fruit cups on the side.

For lunch, Andrew took a peanut butter and jelly sandwich on leftover pancakes. He thought this was the best lunch, a sort of kids gourmet. The rest of us will have leftovers for lunch, as usual.

For dinner, I’ll be making a recipe from the Campbell’s recipe site. I am overwhelmed with the amount of canned soup in the pantry, and I really don’t want to pack and move those heavy cans to our new home. I found out about this site, yesterday, through a friend, who listened to me complain about my stockpile.

I thought there might be the same simple recipes you find on the soup cans, but I was really pleasantly surprised by the amount and type of recipes available at the web site. There is a complete rating and review section, so you can see how the recipes turned out for others. And, readers can add their own home created recipes, too.

The recipe I plan on trying tonight is a chicken and rice bake. I will serve some mixed vegetables on the side (from the freezer). For desert, I’ll use up on of my devil’s food cake boxed mixes for a rich desert. I’ll top the slices of cake with some thawed freezer strawberries.
