Pantry Meals: Lemon Chicken with Capers

Looking for some meals for your food storage? Or would you just like a tasty meal made with only nonperishable foods? You can keep all of the ingredients on hand for a last-minute dinner without having to rush out to buy anything.

This dish, lemon chicken with capers is very tasty. Everyone in my family, including my two-year-old son, loved it. Though I did take the capers out of his portion, but that was easy enough to do.

The trick to making a tasty chicken dish out of canned chicken is browning the meat in a skillet. After browning my chicken, I was pleasantly surprised. . . . It actually tasted like chicken, instead of closer to tuna fish! You have got to try this!

Lemon Chicken with Capers (serves 2)

1 can of canned chicken (12.5 oz)

1/4 teaspoon salt

1/8 teaspoon pepper

1/4 cup white flour

1/4 cup olive oil

1 Tablespoon capers, drained

2 Tablespoons lemon juice

1/2 cup chicken broth

4 oz linguini

Cook linguini according to directions on package. Drain chicken and break it up into bite-size pieces without shredding it. Mix flour, salt and pepper in a bowl. Heat oil in a medium-sized skillet over medium-high heat. Coat the chicken in the flour mixture and brown it in your skillet, stirring often, until golden. Remove chicken from pan and keep warm. Add capers, lemon juice, and chicken broth to pan and heat until boiling. Let boil until sauce cooks down to about 1/4 cup. Add chicken back to pan and stir to coat. Serve over cooked linguini. Enjoy!

Add a vegetable and a bread to make this a complete meal. If you have to eat this in an emergency, you can use canned corn and homemade bread. Otherwise, you have more options, like steamed vegetables and store-bought loaves or rolls.
