Picante Biscuit Bake

This is a delicious casserole that only calls for six ingredients. It’s so easy to put together! If you’d like, you can add a pound of browned ground beef to make it into a hearty meal. This dish is comforting, flavorful, and delicious. It’s sure to be a hit with all the eaters in your house.

For this recipe you will need:

2 tubes (12 ounces each) refrigerated buttermilk biscuits

1 jar (16 ounces) picante sauce or salsa (your favorite brand)

1 medium green pepper, chopped (you can substitute this with red pepper if you’d like)

1 medium onion, chopped (I prefer red because they are slightly sweet and appealing to the eye but you may use yellow or white onion if you prefer)

1 can (2 ¼ ounces) sliced ripe olives, drained

2 cups (8 ounces) shredded Monterey jack cheese (you can substitute Colby Jack or Cheddar cheese if you’d like)

To make this recipe:

Preheat your oven to 350 degrees.

Cut each biscuit into four pieces. Place them in a greased 13 x 9-inch baking dish. Top the biscuits with the picante sauce (or salsa), green pepper (or pepper of your choice), onion, and sliced olives. Bake the casserole, uncovered, in preheated 350 degree oven, for 20 minutes. Sprinkle with cheese and bake an additional 10 minutes longer, or until the cheese is melted. This recipe will make approximately six servings.

If you’re adding meat to it, you’ll want to top the biscuits with the salsa, then add the cooked ground beef, green pepper, onion, and olives. Bake as directed above. If you prefer, you can also put the ground beef in the dish first, then top with the biscuits, salsa, green pepper, onion, and olives then bake as directed above, adding the cheese for the last 10 minutes.
