RO*TEL Fiesta Chicken and Hot and Spicy Chicken Recipes

Still on my RO*TEL Tomatoes and Green Chilies kick, I found a couple of more delicious recipes. I never realized I could do so much with RO*TEL! I think my dinner menu for next week is almost complete!

Fiesta Chicken

This yummy recipe calls for all-purpose flour, 6 boneless, skinless chicken breasts, vegetable oil, 2 cans of Mexican Festival RO*TEL, green onions, 1 can of sliced ripe olives, 16 ounces of cooked yellow rice, sour cream, shredded cheddar cheese, and cilantro. Combine 1/4 cup of all-purpose flour, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper in a bowl and stir. Roll your chicken breasts in this mixture. Place one tablespoon of vegetable oil in your skillet, then turn it on medium heat, and brown your chicken breasts. After the chicken is cooked, add two 10 ounce cans of Mexican Festival RO*TEL (do not drain!), four sliced green onions, and one small can of sliced ripe olives (drained). Heat that to a boil then reduce to low heat. If you have not cooked your rice, you can cook that as you let the chicken simmer for 20 minutes. Serve the chicken mixture over the rice and top with sour cream, cheddar cheese, and cilantro if desired.

Hot and Spicy Chicken Dinner

For this recipe, you will need uncooked quick cook rice, 2 cans of RO*TEL Diced Tomatoes and Green Chilies, one can of cheddar cheese soup, one small onion, dried basil, and 2 pounds of chicken legs and thighs. If your chicken is not already skinned, skin the legs and thighs.

Preheat your oven to 350 degrees. Chop your medium onion into small pieces. Combine 2 cups of uncooked quick cook rice, 2 cans of RO*TEL Diced Tomatoes and Green Chilies (undrained), 1 can of cheddar cheese soup (with no added water), chopped onion, 1 teaspoon of dried basil, 1/3 teaspoon of salt, and 1/8 teaspoon of pepper in a large bowl and stir. Put that mixture into a greased 11 x 7 inch baking dish and place your chicken legs and thighs on top. Cover with aluminum foil and cook at 350 degrees for 20 minutes. Remove foil and bake an additional 25 minutes. Serve and enjoy!
