Shortbread Squares With Walnuts

If you’re not a baker, then this is the dessert for you. Utilizing only three ingredients (not counting the topping), this is a dessert you can almost make with your eyes closed! My husband loves shortbread. And the best part is that it’s delicious in a variety of ways. You can make it plain with nothing on top. It’ll be buttery and delicious. Or, you can add any topping you’d like. I’ve used coconut, chocolate chips, toffee bits, almonds, and walnuts. You can also add dried fruit like apricots or cranberries. Any way you make it, shortbread squares are delicious.

This recipe is baked in a 9×12 dish. The shortbread is pressed into the pan and is thick, making its consistency like a bar.

To make this recipe you’ll need:

3 cups all purpose flour

1 cup butter = 2 sticks (it needs to be cold)

½ cup sugar

1 cup walnut pieces

To make this recipe:

Preheat the oven to 325 degrees

In a large bowl, combine the flour and the sugar and mix with a wooden spoon. Cut each stick of butter in half lengthwise then cut into dices. Put the butter in the flour/sugar mixture. Using a pastry cutter or your fingers, work the butter into the flour until it is the size of peas. If you have a food processor, just pulse the cut butter with the flour/sugar until the butter is the size of peas. Grease a 9×12 dish with butter or spray with cooking spray and pat the dough evenly into the pan. Top with the walnut pieces evenly. Bake in a preheated 325 degree oven for 45 minutes or until the top barely turns golden. Remove from oven and cut into squares or rectangles. Allow to cool slightly before eating. It’s HOT. Enjoy!

Tip: You can cut this recipe in half and bake it in a square 8×8 dish if you’d like. Bake for about 30 minutes.
