Spinach and Sprout Sandwich

Spinach and Sprout Sandwich
A refreshing and low-calorie sandwich. Try spreading one of the spreads or dip recipes on the bread to make a unique and tasty sandwich.

INGREDIENTS:
2 slices multi-grain bread
1/4 cup baby spinach
1/4 cup alfalfa sprouts or mixed sprouts
2 slices tomatoes

DIRECTIONS:
1. Toast bread, if desired.
2. Wash baby spinach and squeeze out excess moisture.
3. Place spinach in bowl and microwave for 30 to 60 seconds, until just slightly wilted.
4. Place spinach, then sprouts and then tomato, then top slice of bread. This makes the sprouts stay in place better.
