The Sneaky Mama’s Whole Grain Pancakes

To those of you who were looking for the Sneaky Mama and her recipes, she had to take a little break! But she’s back with some great new recipes to try with your picky eaters.
If you’re wondering who on earth the Sneaky Mama is–that would be me. As we were discussing our little munchkins who would only eat yellow foods, or wouldn’t eat fruits and vegetables, I mentioned that I had some very sneaky ways to get my seriously picky eater to eat healthy foods. Surely, no matter how picky your picky eater is they like pancakes. And as you know, if you have a picky eater it’s important that what does go in is super healthy. So ditch the refined white flour and go for whole grain foods instead! Not that I take the time to make pancakes all the time but when I do, this is the recipe I use. You can also make a bunch and freeze them. You can reheat them in the microwave or toaster oven just as you might an Eggo waffle!

You will need:

2 cups of Whole wheat flour

1/2 c. Wheat bran

1/4 c. Wheat germ

2 Eggs, separated

1 t. Brown sugar

2 t. Baking soda

1 c. Milk or buttermilk

Preparation

Mix together dry ingredients. Add in milk or buttermilk. Separate eggs, add in yolks. Beat egg whites to soft peaks and fold in. Pour onto heated griddle and cook until brown; turn and repeat.

Preparation Notes:

Are you a lazy cook? I am! I like to throw in all the ingredients and just cook! But here’s a warning–you can’t be that lazy with whole grain recipes. You should mix together the dry ingredients, then add the wet stuff, then the yolks and then the fluffy egg whites in that order. No skimping on fluffing the egg whites either! Why? Doing it this way will make your pancakes come out with a better texture. On the contrary, if you cut too many corners, they’ll come out with a flat, heavy texture.

Serving Suggestion:

Nobody said that you had to serve pancakes with syrup. Any of the following alternatives will likely have less sugar than regular pancake syrup:

Boiling fruit in a little water with a little sugar will make a nice fruit syrup.

Top pancakes with vanila yogurt, fruit and granola.

Slice bananas very thin and mix with cinnamon sugar.

Low fat ice cream syrup very often has less sugar than syrup–check out the labels!
