What’s on Your Valentine’s Day Menu?

Today, as cards are being handed out around schools and boys and girls are reading the sayings on those little candy hearts wondering if the message was really meant for them, I finished my last batch of chocolate truffles. Truffles to me are the ultimate in chocolate indulgence. They are so rich that one is indeed enough (not something I often say) to leave you more than satisfied.

I made the truffles for my husband as part of my Valentine’s Day mini-feast, which will also include a nice bottle of wine and some homemade bruschetta.

What’s on your Valentine’s menu today? In truth, had I known what the day had in store, I likely would’ve ditched the truffles and ordered pizza. It was one of those days when getting a frozen waffle into the toaster is even a struggle. Still, it is the day of LOVE, right? And what better way to show you care for someone than to make them something?

So I boiled the cream. I chopped the chocolate—lots of chocolate. I whisked the cream and chocolate together until it became a velvety, decadent treat fit for a King. Then I made it even better. I added coffee and flavorings—the raspberry extract fragranced my nose like you wouldn’t believe. I waited for the chocolate to firm up then scooped out the little balls and rolled them in cocoa or powdered sugar.

Then, because someone’s gotta do it, I tried one. Then I tried another. Pretty soon I remembered why your mother tells you never to eat too much candy, as my teeth started to ache and my stomach did a mild flip-flop. I packed up 90% of the truffles and sent them to work with my husband.

Valentine’s Day—a time for chocolate, for sweet treats, and for love. If you’re cooking for someone today, remember to cook with love. Keep it simple. Keep it sweet. And remember to sample in moderation; otherwise, you’ll find yourself wishing you’d worn elastic-waist pants. Happy Valentine’s Day!
