INGREDIENTS:
1 1/2 cups raw spinach
2 large hard boiled egg whites, chopped
1/2 cup 1% or fat-free cottage cheese
1/2 cup red/white kidney beans OR chickpeas
1 medium tomato, diced
1 cup chopped raw mushrooms
1 cup chopped cucumber
4 1/2 tsp slivered almonds
1/8 cup finely chopped onion
DIRECTIONS:
1. Combine all ingredients in a small bowl and toss with your favorite Zone dressing.
