Tzatziki - A Yummy Greek Dip

My husband and I both spent several years in England where Doner Kebab (Gyro) stands are everywhere. We absolutely loved them but had the worst time trying to make them at home once we returned to the U.S. (Try to find good Greek food in Montana! We tried a so-called Greek restaurant but they used Caesar Salad Dressing on their Gyros! Even the State Fair was a disappointment as they used sour cream.) After years of searching, I finally found a great recipe for preparing the kebab meat and Tzatziki at home. Lamb is too expensive, so we usually make it with beef, but the right Tzatziki recipe makes that sandwich SO GOOD!

I think most Americans are really put off by the idea of eating a yogurt based dip/sauce on meat. It is too bad for them. For those of us who have had the right tzatziki, it is just heavenly.

I knew a great man who was an amazing teacher (and Provost) at a private, Catholic college. He was LDS but his religion was never an issue in the classroom. When somebody within the faculty questioned the fact that the Provost of a Catholic college was LDS, he was promptly removed from the position and the number of classes he taught was cut from full to part time. This man had a family consisting of a wife and seven children. He never fought what the student body knew was a huge injustice. Now I understand why.

A great way to keep salt from clumping is to put just a little bit of uncooked rice into the storage container. The rice absorbs any ambient moisture and keeps your salt fresh and clump free. (I always keep a few grains of white rice in my salt shakers. I haven't had a clump yet.)

I flew a transatlantic (coach) flight with Virgin Airways once and they did this sort of thing for all their passengers. Every seat had its own viewing screen & earphones for movies or video games (complimentary) and every passenger received a complimentary "kit" with slipper socks, a sleep mask, toothbrush & toothpaste, gum and a few other items. As a regular transatlantic traveler, this made a HUGE impression on me and really made my flight much more comfortable than any other I'd taken. I'll have to keep Jetblue in mind when I fly cross-country!

This is so true! I grew up in an environment where the negative was focused upon. Over the years I've grown and seen the error of that sort of life. Every day when I wake, I think of 3 things I'm grateful for (an easy task) and then when my son wakes up and as I'm dressing him, I tell him about 3 positive things in his life. When he is old enough to understand, I hope to get him in the habit of expressing his grattitude every morning to start each day on the best foot possible. I don't care how you do it - grattitude brings more joy and blessings into your life than stressing ever will!

LOL! A hippo in a tutu! That's me! I got the XBox hooked up and tried DDR this weekend - what a BLAST! I didn't want to stop! I'm doing the Body-for-Life program (see the Weight Loss Blog at: http://weight-loss.families.com/blog/) and this is awesome high-intensity exercise. The only problem is getting yourself to stop!
