Hi Mommysqueek! I LOVE the tomato avocado salad. If you're making it for two or four people, just dice up 2 regular size tomatoes (not the huge ones)--remember to squeeze out the seeds first, then add 1 avocado and, if you like, 1/4 of a red onion diced up. Then add a bit of salt (I like kosher) and squeeze the juice of 1 lime on it. It's sooooo good. Yes, avocados have fat but it's supposedly the "good" kind, so I eat it anyway. :-)

Have fun! If you cut the cold butter into little squares they can work them into the dough with their fingers. It's messy but fun. Then they can press the dough into the dish. You can use a 13x9 dish also if you'd like them a bit thinner, just adjust the cooking time. You want them barely starting to turn golden on top. Enjoy!

Woohoo adoptionblessings! Way to go! I really believe that making better choices without counting or starving is the way to go--that said, it's difficult to lose weight MUCH more slowly this way. Hopefully it will stay off though.

And Kaye, if you'd like the recipe, I posted it yesterday on the Food Blog http://food.families.com/blog/trackback/14407 Also, especially if you're making it with your kids (GREAT recipe to make with your kids because you can't mess it up at all) top it with other ingredients besides nuts. I LOVE topping mine with chocolate chips, coconut, and almonds. YUMMY! Let me know how you like it!

Thanks, Kaye!!! I appreciate it! And shortbread is like a buttery cookie--only I bake mine in a 9x12 pan so it's thicker, almost like a bar. They're way too yummy...hehe

Yes we can, Mommysqueek! Let's face it, extra weight stinks, and it's even harder when we don't have a support system. It's so nice to know others are in the same boat as me and to get together on this forum and talk about it! Good luck to you!
