It's messy (you can also use paper towels or put the spinach in a strainer and press down on it with paper towels) but is better than having to buy all that fresh spinach and cook it to wilt it, etc. The cream cheese doesn't taste like cream cheese once it is cooked, but if you wanted to, you could substitute a white sauce. Make a roux by melting, say 4 TB butter in a skillet. Then add 4 TB flour and mix it together, stirring for about a minute. Then add about 2 cups of milk. Whisk it together and keep stirring for about 15 minutes until it comes to a boil and thickens. Season with salt and pepper and add the other ingredients as directed above. That may be too much milk for this recipe though--I'm not sure. It's definitely more labor-intensive than the cream cheese.
