A Tale of Three Chickens 2 - Blog Entry16 Oct 2008 06:42 PM I think I might stew it with onions carrots and celery and a can of rotel and a couple of tablespoons of wine vinegar, then after about 2 hrs of gentle simmering, (in about 6 cups of water) I'd take the meat off the bones, put half back in the broth, cut up the other half and freeze when cool. To the chicken and broth I'd add a couple of cups of rice, depending on how soupy you want it, 3 cups makes it chicken and rice, 1 or 2 makes it more like soup, though when it is cooling the rice does tend to keep on expanding and soaking up the broth. Anyway, just a thought, I got this off the miserly moms website and it is so good. Oh, you can also add a cup of peas to the pot with the rice. Hope you enjoy it if you try it. You just need to get a little creative. You could start a weekly playgroup at your home, you could also invite friends over for lunch, anything to get people to your house rather than you traveling. You could find a friendly church near your and maybe even host a womens bible study. When I used to feel isolated I just used to call up all my friends and invite them to lunch, then I would get the house spic and span and challenge myself to feed them all for as little as possible, it was a lot of fun. Do you know your neigbors? You could invite some over for coffee, or if you have any interests like scrapbooking or quilting, you could invite them over and just knit or sew or do whatever your favorite hobby is together, this could really bless an older neighbor who perhaps feels lonely and isn't able to socialize much. Flour Prices Are High and Will Continue Rising! - Blog Entry20 Mar 2008 06:48 PM About 2 weeks ago I bought a 25 lb bag of flour at my regular grocery store, the same bags were going for $19.99 last week-just 1 week later! I am so glad I bought when I did. Flour is still on the shelves here, and a couple of stores have 5 lb bags on sale for $1.79 this week, though I'm not sure if there is any actually on the shelves. I have decided to use some oats in my bread recipes to help keep the costs down. Cornmeal seems to have doubled in price too from what I can tell so that isn't an option. This is getting scarey! I try to vary the types of sauce that I make so that the family doesn't realize they are eating so much of the same kind of meat night after night. I might make a stir fry, I will also spice it up and serve in tortilla, and of course there is always the cheapest food in the world (in my opinion)-soup! I went shopping today and noticed that the price of flour, cornmeal and pasta has already almost doubled in most of the stores I shop at. I couldn't find pasta for less than .80 a lb today, usually I can get it for around .50 or even less. The prices really are going up. We all spend half our day in front of our gas fireplace (the best spot in the house!) Nights aren't a problem, I invested in very warm fleece jammies for the little kids, and warm down comfortors for everybody.
