These are seriously some of the best chocolate cupcakes I’ve ever had. I suspect that the additional zucchini makes them extra moist. INGREDIENTS: 1 1/2 cup whole wheat flour 2 tsp baking powder 2 tsp grated orange rind 3 tbs honey or less 1 large egg white 1/4 cup skim milk 3/4 cup orange juice 1 tbs canola oil 1 1/2 cup part-skim ricotta cheese DIRECTIONS: 1.
