Better Living Through Chocolate

It’s Easter, and this means that it took my daughter an hour and a half to go to sleep last night. This is by no means due to her chocolate intake, of course. She had two Easter egg hunts and a special family dinner yesterday, and the chocolate threshold was quite high. Thank goodness for our special smoothies in the morning, or I suspect that her vegetable tally would have been close to zero yesterday. Chocolate is a vegetable, isn’t it? It comes from the cacao tree. Now, I have nothing against chocolate. It does contain sugar and it does … Continue reading

Addicting Desserts

I love Anderson Cooper as much as he loves Crack Pie. The incredibly decadent dessert made famous by Mr. 360 himself during a recent guest stint on Regis and Kelly, and sold at Momofuku Milk Bar in New York City, is supposedly to die for. The way Cooper describes his obsession for the rich dessert is the way I wish he would wax poetic about his adoration for moi. Unfortunately, the cable news hunk is just not that into me… or my gender. Fortunately, I have my own to die for desserts to drown my sorrows in. They may not … Continue reading

Delicious Lemon Coconut Dessert

Necessity is the mother of invention so they say. Also of good recipes. This is another delicious coconut pie which came about because I didn’t have a tin of pineapple one time when I wanted to make it. Rather than rush up to the local store, which would have cost me more as they are expensive I opted to adapt. Yes, I know, if I’d planned ahead it wouldn’t have happened. But hey, we won’t go there. And tinned pineapple is usually a staple in my pantry. Anyway the result was an even more delicious dessert. Wheat and Gluten Free … Continue reading

Pineapple Coconut Pie

Good recipes can result from experimentation and trying different things. They often come about by not having the correct the ingredients on hand and so substituting others for what a recipe says, or taking a little bit of a few recipes and combining them. The coconut topping for this recipe came from my mother years ago. Since then I have adapted it to lots of other recipes, all of different fillings in dessert pies. One of our favorites is Pineapple Coconut Pie. Here is the recipe for Gluten Free Pineapple Coconut Pie Pie shell 8 ounces of gluten free sweet … Continue reading

Add Spring Colors to Your Menu

I’m not much for matchy-matchy color schemes and menu planning. However, I’ve had a change of heart after trying a piece of heavenly Lemon Chiffon Cake last night. A friend of mine made the delectable dessert for her gourmet group and saved me a slice. It was beyond delicious. This cake is divine… delicately divine… with a lemon cream that melts in your mouth.
